Ingredients

  • 2 cups mixed vegetables carrots, bell peppers, broccoli
  • 1 cup cooked protein chicken, beef, or tofu
  • 1 cup cooked rice or pasta
  • 1 cup broth chicken or vegetable
  • 2 tablespoons soy sauce or teriyaki sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Gather all leftover ingredients and prepare your workspace.
  2. Dice mixed vegetables into bite-sized pieces.
  3. Heat a large pot or Dutch oven over medium heat until hot.
  4. Add 1 tablespoon of olive oil to the pot and warm for 1 minute.
  5. Add chopped vegetables and sauté for 5 minutes until tender-crisp.
  6. Add 1 cup cooked protein and stir for 2 minutes until heated through.
  7. Stir in 1 cup cooked rice or pasta until evenly combined.
  8. Pour in 1 cup broth, 2 tablespoons soy sauce, 1 teaspoon garlic powder, 1 teaspoon onion powder, and salt and pepper to taste; bring to a simmer.
  9. Simmer the mixture for 10 minutes, stirring occasionally to develop flavors.
  10. Taste and adjust seasoning as needed before serving.

Notes

Serve straight from the pot and enjoy warm. Store leftovers in an airtight container in the refrigerator for up to 3 days, reheating with a splash of broth if needed.
