  • 1 medium fresh peach cut into chunks (about 2 ounces)
  • 2 ounces 60 ml bourbon, 80 to 100 proof
  • 0.75 ounces 22 ml fresh lemon juice
  • 0.5 ounces 15 ml simple syrup
  • 1 cup ice for shaking and serving
  • 2 to 3 fresh mint leaves optional
  • 1 peach slice or lemon wheel for garnish

Method
 

  1. Cut your fresh peach into chunks, removing the pit but leaving the skin on.
  2. Place the peach chunks and mint leaves (if using) in your cocktail shaker. Use your muddler to gently press and twist the fruit for about 10 to 15 seconds, releasing juices and breaking down the flesh without crushing it to a pulp.
  3. Pour 2 ounces of bourbon into the shaker with the muddled peaches and let it sit for just a moment.
  4. Pour 0.75 ounces of fresh lemon juice and 0.5 ounces of simple syrup into the shaker.
  5. Add about 1 cup of ice cubes to the shaker.
  6. Secure the shaker lid and shake hard for about 10 to 12 seconds until the outside of the shaker gets very cold to the touch.
  7. Fill a rocks glass with fresh ice, then strain the cocktail through a fine mesh strainer into the glass.
  8. Garnish with a fresh peach slice or lemon wheel and a small sprig of fresh mint. Serve immediately.

Notes

Choose peaches that yield slightly to pressure but aren't mushy. Make simple syrup ahead of time and keep refrigerated. Serve immediately for the brightest peach flavor. Don't over-muddle the peach as it releases bitter compounds from the skin. Always use fresh lemon juice, not bottled.
