- Peel the bananas and slice into 1/4-inch thick rounds.
- Place the banana slices into the quart jar, packing them loosely.
- Pour the vodka over the bananas, ensuring all fruit is submerged.
- Add the split vanilla pod to the jar.
- Seal the jar tightly and label with the start date.
- Store in a cool, dark place and shake the jar gently once daily for the first 7 days.
- After 14 days, taste the infusion; continue steeping up to 30 days if a stronger banana flavor is desired.
- Line a fine mesh strainer with cheesecloth and strain the infused vodka into a bowl, leaving solids behind.
- In a small saucepan over medium heat, combine water and sugar; stir until the sugar dissolves completely to form a simple syrup.
- Remove the syrup from heat and let it cool to room temperature.
- Combine the strained liqueur, cooled syrup, sea salt, and nutmeg in a clean container and stir thoroughly.
- Use a funnel to bottle the liqueur into glass storage bottles and seal tightly.
- Let the bottled liqueur rest at least one week before serving to allow flavors to meld.
