  • 1 medium watermelon
  • 1 cup boiling water
  • 1 package 3 oz watermelon jello
  • 1 cup vodka
  • 1 cup cold water

Method
 

  1. Slice the watermelon in half lengthwise to create two bowls for the jello shots.
  2. Use a spoon to scoop out the watermelon flesh, leaving about 1/2 inch of fruit on the rind.
  3. In a medium saucepan, bring 1 cup of water to a boil over medium-high heat.
  4. Remove the saucepan from heat and whisk in the watermelon jello until fully dissolved, about 2 minutes.
  5. Stir in 1 cup of chilled vodka until well combined.
  6. Add 1 cup of cold water to the mixture and stir to cool and balance flavors.
  7. Pour the jello mixture into each watermelon half, filling to the top without overflowing.
  8. Refrigerate the filled watermelon halves for at least 4 hours (240 minutes) or until the jello is set.
  9. Once firm, slice the watermelon halves into wedges and serve chilled.
