Ingredients

Main
  • 6 lbs light malt extract
  • 1 lb crystal malt 40L
  • 1 oz bittering hops e.g., Cascade
  • 1 oz flavor hops e.g., Fuggle
  • 1 vanilla bean or 2 tsp vanilla extract
  • 1 packet of ale yeast e.g., Safale US-05
  • 3/4 cup priming sugar for bottling
  • 5 gallons of water for brewing

Equipment

  • Brewing kettle (5 gallon)
  • Fermentation bucket with airlock
  • Sanitizing solution
  • Hydrometer
  • Thermometer
  • Bottling bucket and bottles
  • Stirring spoon

Method

  1. Sanitize all equipment thoroughly.
  2. Heat 2 gallons of water to about 150°F and steep the crystal malt for 30 minutes.
  3. After steeping, remove the grains and allow them to drain back into the kettle.
  4. Bring the water to a boil and stir in the light malt extract.
  5. Once boiling, add the bittering hops and boil for 60 minutes.
  6. With 15 minutes left in the boil, add the flavor hops.
  7. After the boil, cool the wort quickly using an immersion chiller or an ice bath.
  8. Transfer the cooled wort to your fermentation bucket and top it up with water to reach 5 gallons.
  9. Add the yeast and seal with the airlock, then let it ferment for about 1-2 weeks.

Notes

Allow the beer to condition for at least two weeks after bottling for optimal flavor.
