  • 2 cups cream soda
  • 1/2 cup butterscotch syrup
  • 1/4 cup whole milk or heavy cream
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Whipped cream for topping about 1/2 cup
  • Butterscotch bits or drizzle optional garnish
  • 2 tablespoons butterscotch schnapps optional, for richer flavor

Method
 

  1. Heat 2 cups cream soda in a saucepan over medium heat for about 2 minutes until hot but not boiling.
  2. Stir in 1/2 cup butterscotch syrup and whisk until fully combined.
  3. Add 2 tablespoons butter, stirring constantly until melted.
  4. Pour in 1/4 cup whole milk or heavy cream, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt; whisk until smooth.
  5. If using, stir in 2 tablespoons butterscotch schnapps until blended.
  6. Remove from heat and pour the hot mixture evenly into two tall glasses.
  7. Whip 1/2 cup heavy cream with 1 tablespoon butterscotch syrup and a pinch of salt until soft peaks form.
  8. Spoon or pipe the whipped cream onto each glass and garnish with butterscotch drizzle or bits if desired.

Notes

Serve immediately for the best foam texture, and store the butterbeer base separately to maintain carbonation.
