  • 1.5 cups cream soda chilled or room temperature
  • 1/2 cup heavy whipping cream
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons caramel sauce for garnish (optional)
  • 2 tablespoons whipped cream for topping
  • Pinch salt

Method
 

  1. Pour 1/4 cup butterscotch syrup into a small saucepan and warm over medium heat for 1 minute, stirring occasionally.
  2. Stir in 1 tablespoon butter and 1/2 teaspoon vanilla extract until the butter melts and the mixture is smooth.
  3. Remove the saucepan from heat and let the butterscotch mixture cool for 30 seconds.
  4. Divide the butterscotch mixture evenly between two glasses, placing about 2 tablespoons in each glass.
  5. Slowly pour 1.5 cups cream soda into the glasses, stirring gently to combine with the butterscotch base.
  6. Whip 1/2 cup heavy whipping cream with a pinch of salt until soft peaks form, about 1 to 2 minutes.
  7. Top each glass with whipped cream and drizzle 2 tablespoons caramel sauce over the top, if desired.

Notes

Make the butterscotch base ahead of time and store in the refrigerator for up to two weeks; assemble with fresh whipped cream before serving.
