Ingredients

  • 1 cup ube peeled and chopped
  • 1 cup rice short-grain preferred
  • 4 cups water
  • 1/2 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon optional
  • 1 cup milk or non-dairy alternative

Method
 

  1. Rinse the rice under cold water to remove excess starch, then soak in water for about 30 minutes.
  2. Peel and chop the ube into small pieces to ensure it blends smoothly.
  3. In a blender, combine the soaked rice, chopped ube, and water; blend until smooth and creamy, about 1-2 minutes.
  4. Strain the blended mixture through a strainer or cheesecloth into a large bowl or pitcher to remove solids.
  5. Add sugar, vanilla extract, and cinnamon to the strained liquid; stir until the sugar is fully dissolved, adjusting sweetness to taste.
  6. Pour in the milk (or non-dairy alternative) and stir until well combined.
  7. Chill the ube horchata in the refrigerator for at least 1 hour before serving to allow flavors to meld.
  8. Serve the chilled ube horchata over ice and garnish with a sprinkle of cinnamon if desired.

Notes

For an extra creamy texture, blend in a little coconut cream before serving.
