Ingredients

  • 1.5 cups 12 ounces dark rum
  • 2 cups pineapple juice
  • 1.5 cups orange juice
  • 0.5 cup lime juice
  • 0.5 cup simple syrup
  • 1 teaspoon crushed allspice berries
  • 1 small piece cinnamon stick
  • 2 pinches freshly grated nutmeg
  • 1 cup pineapple chunks for garnish
  • 4 to 5 orange slices for garnish
  • 8 to 10 maraschino cherries optional
  • 2 to 3 cups ice crushed or cubed

  • Citrus juicer or hand juicer

Method
 

  1. Pour 2 cups pineapple juice and 1.5 cups orange juice into a large punch bowl.
  2. Add 0.5 cup fresh lime juice to the bowl.
  3. Stir in 0.5 cup simple syrup for 10 to 15 seconds until fully dissolved.
  4. Toast 1 teaspoon crushed allspice berries and 1 cinnamon stick in a dry skillet over medium heat for 30 to 45 seconds.
  5. Add toasted spices to the punch bowl and let sit for 5 minutes to infuse.
  6. Slowly pour 1.5 cups dark rum into the mixture, tasting as you go to adjust strength.
  7. Grate 2 pinches of fresh nutmeg over the punch.
  8. Stir the entire batch and refrigerate for at least 30 minutes to allow flavors to meld.
  9. Add 2 to 3 cups of ice and garnish with pineapple chunks, orange slices, and cherries before serving.

Notes

Punch can be prepared up to 2 hours ahead and chilled; add ice and garnish just before serving.
