Method
- Slice and core half a medium pineapple into roughly one-inch chunks; freeze the pineapple chunks for at least two hours if using fresh fruit.
- Peel and slice half a banana into half-inch rounds; freeze the banana slices for at least two hours for a creamier texture.
- Gather all ingredients and equipment on the counter by your blender to streamline the process.
- Pour 1 cup of coconut milk into the blender first to ensure smooth blending.
- Add 1/2 cup of plain Greek yogurt on top of the milk for creaminess and protein.
- Add the frozen pineapple chunks and frozen banana slices to the blender.
- Add 1/2 teaspoon vanilla extract and 1 tablespoon honey if using, for extra flavor and sweetness.
- Blend on low speed for 5 seconds, then increase to high speed and blend for 45 to 60 seconds until completely smooth.
- Check the consistency; if too thick, add an extra splash of milk and blend briefly; if too thin, add a few ice cubes. Pour into two tall glasses and serve immediately.
Notes
Freeze pineapple chunks and banana slices ahead of time to ensure a thick, creamy smoothie without diluting ice; serve immediately after blending for the best flavor and texture.
