Ingredients
  

Main
  • 1 cup frozen mixed berries blueberries, raspberries, and blackberries
  • 1/2 cup rolled oats old-fashioned or quick oats
  • 1 cup frozen mango chunks
  • 1 cup coconut milk from a can or carton
  • 1/2 cup unsweetened almond milk or milk of choice
  • 1 ripe banana frozen, optional but recommended
  • 1 tablespoon raw honey or agave syrup optional, if extra sweetness is desired
  • 1/2 teaspoon vanilla extract
  • Ice cubes as needed for thickness

Equipment

  • High-powered blender (Vitamix, Ninja, or similar)
  • Measuring cups and spoons
  • Cutting board
  • Chef's knife
  • Two drinking glasses
  • Spoon or smoothie straw for stirring

Method
 

  1. Peel and slice a ripe banana, place the slices in a freezer-safe container, and freeze for at least 2 hours or overnight.
  2. Gather all ingredients at room temperature and prepare your blender.
  3. Add 1/2 cup rolled oats to the blender and pulse briefly to break them down.
  4. Pour in 1 cup coconut milk, 1/2 cup almond milk, and 1/2 teaspoon vanilla extract.
  5. Layer 1 cup frozen mixed berries, 1 cup frozen mango chunks, and the frozen banana slices on top of the liquids.
  6. Blend on low speed for 10 seconds, then increase to high speed and blend for 60 to 90 seconds until smooth.
  7. Check consistency: if too thick, add ice cubes one at a time and blend for 15 seconds between additions; if too thin, add more frozen fruit or banana.
  8. Taste the smoothie and add 1 tablespoon raw honey or agave syrup if extra sweetness is desired, then blend for 10 more seconds.
  9. Pour into two glasses and serve immediately.

Notes

Leftover smoothie can be stored in an airtight container in the refrigerator for up to 24 hours; stir or shake before drinking.
