Ingredients
  

Main
  • 2 ounces aged rum
  • 1 ounce fresh lime juice
  • 0.5 ounce simple syrup
  • 2-3 dashes Angostura bitters
  • Ice
  • Lime twist for garnish

Equipment

  • Cocktail shaker
  • Jigger
  • Strainer
  • Bar spoon
  • Coupe glass or rocks glass
  • Cutting board
  • Citrus squeezer or juicer

Method
 

  1. Chill your glass by filling it with ice and letting it sit while you prepare the drink.
  2. Pour exactly 2 ounces of aged rum into a jigger and set aside.
  3. Cut a lime in half and juice it until you have 1 ounce of fresh lime juice, then strain if desired.
  4. Measure 0.5 ounce of simple syrup using a jigger.
  5. Add 2 to 3 dashes of Angostura bitters to an empty cocktail shaker.
  6. Pour the rum, lime juice, and simple syrup into the shaker with the bitters.
  7. Add ice to the shaker, filling it about three-quarters full.
  8. Seal the shaker and shake vigorously for about 15 seconds until the exterior frosts over.
  9. Discard the ice from the chilled glass and strain the cocktail into it using a Hawthorne strainer.
  10. Twist a lime peel over the cocktail to release oils, then drop it in as garnish and serve immediately.

Notes

Always use freshly squeezed lime juice and aged rum for the best flavor. Serve immediately after preparation.
