Ingredients
  

Main
  • 1.5 ounces silver or blanco tequila
  • 4 ounces fresh lime juice about 2 limes
  • 4 ounces club soda or soda water
  • 0.5 ounce agave nectar or simple syrup optional
  • Ice cubes
  • Lime wheel or wedge for garnish
  • Pinch of sea salt optional

  • Highball glass or rocks glass
  • Jigger (1.5-ounce and 0.5-ounce)
  • Bar spoon or long cocktail spoon
  • Cutting board and knife for citrus
  • Citrus juicer or hand squeezer

Method
 

  1. Set out your glass and fill it with ice cubes while you prepare everything else. A cold glass keeps the drink properly chilled without diluting it too quickly as the ice melts.
  2. Cut 2 limes in half and squeeze them into a small bowl or directly into your jigger to get 4 ounces of fresh lime juice.
  3. Use your jigger to pour exactly 1.5 ounces of silver tequila into your ice-filled glass.
  4. Pour 4 ounces of freshly squeezed lime juice into the glass.
  5. Pour in 0.5 ounces of agave nectar if you're using it. Stir well to combine the sweetener with the tequila and lime juice before adding the carbonation.
  6. Pour 4 ounces of club soda into your glass, stopping before the drink overflows to leave room for stirring and the lime garnish.
  7. Use a bar spoon to stir the drink about 8 to 10 times, stirring down toward the bottom to blend the ingredients without losing carbonation. Avoid vigorous stirring.
  8. Squeeze a lime wheel over the drink to release its oils, then drop it in as garnish. Serve immediately while the drink is properly chilled and fizzy.

Notes

Use freshly squeezed lime juice every single time. Bottled lime juice tastes metallic in a drink this simple. Buy decent tequila ($20-$30 range). Use large ice cubes as they melt slower than crushed ice. Add the soda last to keep the fizz intact. This drink doesn't store well and should be consumed immediately for best carbonation and flavor.
