Ingredients
  

Main
  • 3 pounds chicken wings separated into flats and drums, or whole wings if you prefer
  • 1/2 cup tequila preferably silver or blanco tequila
  • 1/3 cup fresh lime juice about 4 to 5 fresh limes
  • 1/4 cup honey or agave nectar
  • 3 tablespoons soy sauce
  • 2 tablespoons butter
  • 4 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 2 limes for garnish
  • Fresh cilantro chopped, for garnish

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken wings completely dry with paper towels to remove surface moisture.
  3. In a large mixing bowl, toss the wings with salt, black pepper, cumin, smoked paprika, and cayenne pepper until evenly coated.
  4. Line a baking sheet with aluminum foil or parchment paper and arrange the seasoned wings in a single layer without crowding.
  5. Roast the wings in the preheated oven for 20 minutes until they begin to brown but are not fully cooked.
  6. Meanwhile, in a small saucepan over medium heat, melt the butter and sauté the minced garlic for about 1 minute until fragrant.
  7. Carefully add the tequila to the pan, then stir in fresh lime juice, honey, and soy sauce; simmer for 3 to 4 minutes until the glaze reduces slightly and becomes glossy.
  8. Remove the wings from the oven and pour half of the glaze over them; toss gently with tongs to coat evenly.
  9. Return the wings to the oven and roast for an additional 15 minutes until deeply golden and an internal temperature of 165°F (74°C) is reached.
  10. Remove from the oven and immediately toss the wings with the remaining glaze while hot; garnish with lime zest and chopped cilantro before serving.

Notes

Don’t skip patting the wings dry and the initial dry roast to achieve crispy skin and allow the glaze to adhere properly.
