Ingredients

  • 2 cups frozen or fresh mango chunks
  • 4 fresh passion fruits pulp extracted (or 1 cup frozen passion fruit puree)
  • 1 cup coconut milk full-fat or light
  • 1/2 cup plain or vanilla Greek yogurt
  • 2 tablespoons honey or agave adjust to taste
  • 1/4 teaspoon turmeric powder optional
  • 1/2 cup ice cubes
  • 1/4 cup water add more if needed for desired thickness

Method
 

  1. Gather mango chunks, passion fruit pulp, coconut milk, yogurt, honey, turmeric, ice, and water.
  2. If using fresh passion fruit, cut in half and scoop out the pulp, then strain out seeds if desired.
  3. Add 1 1/2 cups mango chunks, 1/3 cup coconut milk, 1/4 cup yogurt, 1 tablespoon honey, 1/4 teaspoon turmeric, and 1/4 cup ice to the blender; blend on high for 45 to 60 seconds until smooth.
  4. Divide the mango mixture between two glasses, filling each halfway to create the sunrise layer.
  5. Rinse the blender, then add passion fruit pulp, remaining 1/2 cup mango, 2/3 cup coconut milk, 1/4 cup yogurt, 1 tablespoon honey, and 1/4 cup ice; blend on high for 45 to 60 seconds until smooth.
  6. Pour the passion fruit mixture slowly over the back of a spoon held just above the mango layer to form distinct sunset layers.
  7. Serve immediately while cold and layered, enjoying within minutes for best color separation.

Notes

Serve immediately while layers are defined. To keep the smoothie colder and maintain the layered effect, chill glasses in the freezer for five minutes before pouring.
