Strawberry Tequila Jello Shots

Ingredients
  

Main
  • 3 ounces strawberry-flavored gelatin one 3-ounce package
  • 1 cup boiling water
  • 1/2 cup cold tequila
  • 1/2 cup fresh lime juice about 4 limes
  • 1/4 cup fresh strawberry puree or mashed strawberries
  • 1/4 cup cold water
  • 1/2 cup fresh strawberries finely diced
  • 2 tablespoons granulated sugar optional, for rimming

Method
 

  1. Pour 1 cup of boiling water into a small saucepan and add the strawberry-flavored gelatin packet.
  2. Stir constantly for 2 minutes until the gelatin is completely dissolved and no grainy bits remain.
  3. Remove the saucepan from heat and let it cool for 1 minute.
  4. Stir in 1/2 cup cold tequila, 1/2 cup fresh lime juice, 1/4 cup strawberry puree, and 1/4 cup cold water for 1 minute to combine.
  5. Taste the mixture and adjust flavor with additional lime juice or strawberry puree as desired.
  6. Strain the mixture through a fine mesh strainer into a clean bowl to remove pulp and undissolved bits.
  7. Place about 1 teaspoon of finely diced strawberries into the bottom of each shot glass.
  8. Pour the strained gelatin mixture into each shot glass, filling about three-quarters full.
  9. Arrange the filled shot glasses on a tray and refrigerate for at least 240 minutes or until set.
  10. Remove the jello shots from the fridge 5 minutes before serving and serve chilled.

Notes

Make these up to four days ahead and store covered in the coldest part of the fridge.
