- Pour 1 cup of boiling water into a small saucepan and add the strawberry-flavored gelatin packet.
- Stir constantly for 2 minutes until the gelatin is completely dissolved and no grainy bits remain.
- Remove the saucepan from heat and let it cool for 1 minute.
- Stir in 1/2 cup cold tequila, 1/2 cup fresh lime juice, 1/4 cup strawberry puree, and 1/4 cup cold water for 1 minute to combine.
- Taste the mixture and adjust flavor with additional lime juice or strawberry puree as desired.
- Strain the mixture through a fine mesh strainer into a clean bowl to remove pulp and undissolved bits.
- Place about 1 teaspoon of finely diced strawberries into the bottom of each shot glass.
- Pour the strained gelatin mixture into each shot glass, filling about three-quarters full.
- Arrange the filled shot glasses on a tray and refrigerate for at least 240 minutes or until set.
- Remove the jello shots from the fridge 5 minutes before serving and serve chilled.
Notes
Make these up to four days ahead and store covered in the coldest part of the fridge.
