Method
 

  1. Gather all your equipment and ingredients on a clean counter before you start. Having everything ready prevents scrambling when the boba mixture is ready to sphere.
  2. Pour 1/4 cup of filtered water into a small bowl and sprinkle 1 teaspoon of sodium alginate over the surface. Whisk continuously for about 2 minutes until the powder dissolves completely and the mixture becomes clear and slightly thick.
  3. Pour 1 cup of strawberry juice into a small saucepan and add 2 tablespoons of sugar over medium-low heat. Stir gently until the sugar dissolves, which takes about 2 minutes, then remove from heat and let it cool to room temperature.
  4. Once the strawberry juice cools, pour it into the bowl with the sodium alginate mixture and whisk together for about 1 minute until fully combined. The mixture should look smooth and slightly glossy.
  5. Pour 1 cup of water into another small bowl and dissolve 1/2 teaspoon of calcium chloride by whisking until it's completely incorporated. This bath will be your setting solution.
  6. Using a spherification spoon or small rounded spoon, carefully scoop a small amount of the strawberry mixture and gently drop it into the calcium chloride bath. You'll see the outer layer immediately begin to gel and form a thin membrane as it hits the liquid.
  7. Let each boba sphere sit in the calcium bath for about 1 to 2 minutes, which allows the gel membrane to thicken and become stronger. If you leave them too long (over 3 minutes), the entire sphere becomes gel and loses that perfect popping center.
  8. Use a slotted spoon to carefully scoop out the finished boba spheres and place them in a bowl of clean water to rinse away excess calcium solution. Swirl them gently in the water a few times, then transfer them to a paper towel to dry.
  9. Transfer your finished popping boba to an airtight container and refrigerate until you're ready to use them. They'll keep for up to two weeks and work beautifully in any cold beverage or dessert.

Notes

The key to perfect popping boba is not leaving the spheres in the calcium bath too long; aim for 1 to 2 minutes so the inside stays liquid and bursts with flavor. Use fresh, high-quality strawberry juice for the brightest flavor and best color. Work in small batches of 5 to 10 spheres at a time. Store finished boba in juice or simple syrup rather than plain water to keep them flavorful.
