Ingredients

  • 2 cups fresh strawberries hulled and sliced
  • 1/4 cup fresh lime juice
  • 1/4 cup simple syrup adjust to taste
  • 2 cups sparkling water
  • Mint leaves for garnish

Method
 

  1. Wash the strawberries thoroughly under cold running water.
  2. Place the hulled and sliced strawberries into a blender and puree until smooth.
  3. Strain the strawberry puree through a fine mesh strainer into a bowl, pressing on the solids to extract all juice.
  4. Stir the fresh lime juice and simple syrup into the strained strawberry juice until well combined.
  5. Gently fold in the sparkling water to the strawberry mixture to preserve the fizz.
  6. Taste the mocktail and adjust sweetness or tartness by adding more simple syrup or lime juice as needed.
  7. Fill serving glasses with ice and pour the strawberry mocktail over the ice.
  8. Garnish each glass with fresh mint leaves and serve immediately.

Notes

For an extra touch, freeze strawberry slices in ice cubes to add to the mocktail.
