Ingredients
  

Main
  • 1/2 cup dragon fruit puree frozen or fresh, thawed
  • 1/4 cup coconut milk or milk of choice
  • 2 tablespoons vanilla syrup or simple syrup
  • 3/4 cup water cold or hot depending on preference
  • 1 cup ice cubes for cold version
  • 1 tablespoon white sugar if adjusting sweetness

Equipment

  • Blender or food processor
  • Tall drinking glass
  • Measuring cups and spoons
  • Spoon for stirring
  • Fine mesh strainer (optional)
  • Ice cube tray

Method
 

  1. Remove frozen dragon fruit puree from the freezer and let soften for 2 minutes.
  2. Measure and pour 1/4 cup coconut milk into the blender.
  3. Add 2 tablespoons vanilla syrup to the blender.
  4. Add softened 1/2 cup dragon fruit puree and 3/4 cup cold or hot water to the blender.
  5. Blend on high speed for 45 to 60 seconds until completely smooth.
  6. Strain the blended mixture through a fine-mesh strainer into a tall glass.
  7. Fill the glass with 1 cup ice cubes for the cold version and pour the strained drink over the ice.
  8. Stir the drink thoroughly and taste; add up to 1 tablespoon white sugar if more sweetness is desired.
  9. Serve immediately for best color and texture.
