Ingredients

  • 2 ounces fresh mango puree about half a ripe mango, blended
  • 2 ounces silver tequila
  • 1 ounce fresh lime juice juice from 1 lime
  • 0.5 ounces triple sec or Cointreau
  • 2 to 3 thin slices fresh jalapeño pepper or 1 slice for less heat
  • 0.5 ounces agave nectar or simple syrup
  • Sea salt for rimming the glass
  • Ice cubes
  • Fresh mango slice and lime wheel for garnish

Method
 

  1. Cut a ripe mango in half, scoop the flesh into a blender, and blend until smooth.
  2. Cut a lime in half and squeeze to extract 1 ounce of fresh lime juice.
  3. Slice the jalapeño into thin rounds, removing seeds for less heat if desired.
  4. Pour a thin line of agave nectar onto a plate and spread sea salt on another plate; dip the rim of your glass into the nectar and then into the salt to rim.
  5. Add 2 ounces silver tequila, 2 ounces mango puree, 1 ounce lime juice, 0.5 ounces triple sec, and 0.5 ounces agave nectar into a cocktail shaker.
  6. Add 2 to 3 thin jalapeño slices and fill the shaker three-quarters full with ice cubes.
  7. Shake vigorously for 10 to 12 seconds to chill, dilute, and infuse the drink.
  8. Strain the mixture into the salt-rimmed glass filled with fresh ice, leaving jalapeño slices behind.
  9. Garnish with a fresh mango slice and a lime wheel and serve immediately.

Notes

For more control over heat, infuse tequila with jalapeño slices for 24 hours ahead of time.
