Ingredients

  • 2 ounces coconut rum 0.5 ounces per shot
  • 2 ounces spiced rum 0.5 ounces per shot
  • 3 ounces pineapple juice 0.75 ounces per shot
  • 2 ounces heavy cream 0.5 ounces per shot
  • Ice for chilling glasses, optional

  • Jigger or measuring spoon
  • Bar spoon or cocktail spoon

Method
 

  1. Place shot glasses in the freezer for at least 5 minutes to chill them. Chilled glassware keeps the shot cold longer and makes the layering process easier.
  2. Pour 0.5 ounces of coconut rum into each chilled shot glass, filling it about one-quarter full. This serves as your foundation layer.
  3. Slowly pour 0.5 ounces of spiced rum over the back of a bar spoon to help it float on top of the coconut rum. The spoon breaks the fall so the layers remain separate.
  4. Using the same bar spoon technique, carefully pour 0.75 ounces of pineapple juice over the spoon so it settles on top of the spiced rum layer.
  5. Pour heavy cream into a separate chilled glass and let it sit in the freezer for 2 minutes if possible. Cold cream pours more slowly and stays on top of the other layers.
  6. Pour 0.5 ounces of chilled heavy cream slowly over the bar spoon as your final layer, creating the silky, creamy top layer.
  7. Look at your finished shot from the side to confirm you have distinct layers from bottom to top: coconut rum, spiced rum, pineapple juice, and cream.
  8. Serve immediately while the layers are still separated and the glass is still cold. Drink as a shooter or sip slowly to experience each layer's distinct flavor.

Notes

The key to perfect layers is patience and cold ingredients. Pour slowly over the back of a bar spoon for best results. Make these shots to order rather than in advance, as the layers will eventually blend together if they sit for more than a few minutes.
