Ingredients

Main
  • 1 cup heavy whipping cream cold
  • 2 tablespoons whole milk cold
  • 1/8 teaspoon sea salt or kosher salt
  • 1 teaspoon powdered sugar optional

Equipment

  • Electric milk frother or handheld frother
  • Small mixing bowl or frother pitcher
  • Measuring spoons
  • Measuring cups
  • Whisk (optional)
  • Spoon for scooping foam

Method

  1. Chill the frother pitcher or mixing bowl in the freezer for 1 to 2 minutes.
  2. Pour 1 cup cold heavy whipping cream and 2 tablespoons cold whole milk into the chilled vessel.
  3. Sprinkle 1/8 teaspoon sea salt and 1 teaspoon powdered sugar into the mixture, then stir gently to combine.
  4. Insert the frother wand fully submerged at the bottom and off-center in the cream mixture.
  5. Turn on the frother and froth the mixture for 60 to 90 seconds until the volume doubles and soft peaks form.
  6. Stop frothing when soft peaks appear, then let the foam rest for 10 seconds for large bubbles to settle.
  7. Use a spoon to gently scoop and layer the cold foam onto your cold drink.
  8. Taste the foam and adjust salt with a tiny pinch if needed before serving.

Notes

Make cold foam right before serving for the fluffiest, most stable result; foam begins to deflate after about 5 minutes.
