Method
- Warm your mug by filling it with hot water, letting it sit for 30 seconds, then emptying it.
- Measure 2 ounces dark rum, 1 tablespoon honey, and 0.5 ounce fresh lemon juice into separate small bowls or cups.
- Bring 8 ounces of water to a boil in a kettle or pot, then let it cool for about 30 seconds until just off a boil.
- Place the cinnamon stick, cloves, and star anise into the warmed mug and let them steep.
- Add 1 tablespoon honey and 0.5 ounce fresh lemon juice to the mug and stir for about 10 seconds to begin dissolving the honey.
- Pour 2 ounces of dark rum into the mug over the honey and lemon mixture.
- Slowly add 6 ounces of hot water to the mug, stirring gently as you pour to blend the ingredients.
- Stir the drink for 20 to 30 seconds with a spoon until the honey fully dissolves and the flavors combine.
- Taste the toddy and adjust sweetness, acidity, or spice levels as desired by adding a touch more honey, lemon juice, or spices.
- Garnish with a lemon wheel or twist and serve immediately while steaming hot.
