Ingredients
  

Main
  • 2 ounces aged rum light or dark, depending on preference
  • 0.75 ounce fresh lime juice
  • 0.5 ounce simple syrup
  • 0.25 ounce egg white optional, creates a silky foam
  • Ice cubes for shaking
  • Lime wheel or twist for garnish

Equipment

  • Cocktail shaker or mixing jar
  • Jigger or measuring cup
  • Citrus juicer or hand-held reamer
  • Hawthorne strainer or fine mesh strainer
  • Coupe or rocks glass
  • Bar spoon
  • Cutting board and paring knife

Method
 

  1. Chill your coupe or rocks glass in the freezer for at least 5 minutes.
  2. Cut a fresh lime in half and juice to yield 0.75 ounce of lime juice.
  3. Measure and pour 2 ounces of aged rum, 0.75 ounce of fresh lime juice, and 0.5 ounce of simple syrup into the shaker.
  4. If using egg white, add 0.25 ounce to the shaker.
  5. Add ice cubes to fill the shaker three-quarters full.
  6. Shake vigorously for 10 to 15 seconds to chill and dilute; if using egg white, shake for the full 15 seconds to create foam.
  7. Strain the cocktail into the chilled glass, leaving ice behind.
  8. Twist a lime wheel over the drink to express oils, then drop it in as garnish and serve immediately.

Notes

Use fresh lime juice for the best flavor and shake vigorously for proper dilution and foam development.
