Ingredients
  

Main
  • 2 ounces 60 milliliters ruby port wine
  • 4 ounces 120 milliliters premium tonic water
  • 6 to 8 ice cubes or 1 large handful
  • 1 lemon or orange twist for garnish
  • Optional: 1 sprig fresh thyme or 2–3 dashes Angostura bitters

Equipment

  • Highball or rocks glass
  • Jigger or measuring shot glass
  • Bar spoon or long spoon
  • Ice cubes
  • Citrus zester or vegetable peeler
  • Cutting board and small knife

Method
 

  1. Chill a highball or rocks glass in the freezer for 2 minutes.
  2. Fill the chilled glass three-quarters full with ice cubes.
  3. Use a jigger to measure and pour 2 ounces of ruby port wine over the ice.
  4. Slowly pour 4 ounces of premium tonic water down the side of the glass to preserve carbonation.
  5. Gently stir the mixture with a bar spoon for about 5 seconds using an up-and-down motion.
  6. Cut a 2-inch twist of lemon or orange peel with a peeler, avoiding the white pith.
  7. Hold the peel over the drink and twist sharply to express the citrus oils onto the surface.
  8. Drop the twist into the glass, garnish with thyme sprig or bitters if desired, and serve immediately.

Notes

Use large ice cubes to slow dilution and serve immediately to enjoy maximum carbonation and balance.
