Popping Boba Drink

Ingredients
  

Drink Base
  • Brewed tea or fruit juice: 1.5 cups cooled
  • Milk dairy or non-dairy: 0.5 cup
  • Honey or agave syrup: 2 tablespoons
  • Ice: 1 cup
Popping Boba
  • Fruit juice any flavor: 1 cup
  • Calcium chloride powder: 1 teaspoon
  • Sodium alginate powder: 0.5 teaspoon
  • Water for sodium alginate solution: 1 cup

Equipment

  • Two tall glasses or drinking cups
  • Measuring cups and spoons
  • Spoon or boba spoon for scooping pearls
  • Wide boba straws
  • Pitcher or container for mixing base liquid
  • Ice maker or ice tray

Method
 

  1. Mix 0.5 teaspoon sodium alginate powder with 1 cup water in a blender on high speed for 2 minutes, then let rest for 30 minutes to remove air bubbles.
  2. Dissolve 1 teaspoon calcium chloride powder in 2 cups of water and stir until completely clear.
  3. Combine 1 cup fruit juice with the prepared sodium alginate solution by slowly pouring and stirring gently, then let rest for 15 minutes.
  4. Using a small spoon, scoop the juice mixture and drop it into the calcium chloride bath to form spheres.
  5. Leave the spheres in the calcium chloride solution for 2 to 3 minutes to set the gel exterior.
  6. Use a slotted spoon to transfer the boba to a strainer and rinse under cool water for 30 seconds.
  7. Pour 0.75 cup cooled brewed tea or juice into each glass, add 0.25 cup milk to each, stir in 1 tablespoon honey per glass, and adjust sweetness to taste.
  8. Fill each glass with ice, leaving about an inch of space, then spoon in the popping boba evenly.
  9. Insert a wide boba straw into each drink, stir quickly to distribute boba, and serve immediately.

Notes

Pro Tip: Make your sodium alginate solution the night before to allow bubbles to rise, resulting in smoother, more uniform popping boba spheres.
