  • 4 ounces fresh pineapple juice
  • 1.5 ounces white or dark rum
  • 0.5 ounce fresh lime juice
  • 0.25 ounce simple syrup optional
  • 2 ounces club soda or sparkling water
  • Ice cubes
  • Pineapple wedge or fresh mint sprig for garnish

  • Jigger or small measuring glass
  • Bar spoon or long-handled spoon
  • Cocktail strainer
  • Highball or rocks glass
  • Cutting board and knife

Method
 

  1. Pour ice cubes into your glass until it's three-quarters full.
  2. Measure 1.5 ounces of rum using your jigger and pour it over the ice.
  3. Add 4 ounces of fresh or quality bottled pineapple juice directly into the glass.
  4. Squeeze or pour 0.5 ounce of fresh lime juice into the glass.
  5. If your pineapple juice tastes acidic or you prefer a sweeter drink, add 0.25 ounce of simple syrup.
  6. Pour 2 ounces of club soda or sparkling water into the glass to add fizz.
  7. Using a bar spoon or regular long spoon, stir the cocktail for 10 to 15 seconds to blend all ingredients.
  8. Place a fresh pineapple wedge or sprig of mint on the rim or float it in the glass. Serve immediately while chilled.

Notes

Keep pineapple juice and spirits in the freezer for 30 minutes before making to reduce dilution. Fresh lime juice makes a noticeable difference in flavor. Adjust simple syrup based on the sweetness of your pineapple juice. For a mocktail version, simply omit the rum and add extra club soda. This cocktail can be batched for parties by multiplying the recipe and adding club soda just before serving.
