Ingredients
  

Main
  • 2 cups fresh pineapple juice 16 ounces, chilled
  • 1/2 cup fresh lime juice 4 ounces, freshly squeezed
  • 1/4 cup simple syrup 2 ounces
  • 1/4 cup orange juice 2 ounces, fresh if possible
  • 1 cup ice cubes plus more for serving
  • 2 pineapple wedges for garnish
  • 2 lime wheels for garnish
  • 2 ounces coconut rum optional, 1 ounce per drink

Equipment

  • Cocktail shaker or mason jar with a tight lid
  • Jigger or measuring cup for accurate portions
  • Bar spoon or long-handled spoon for stirring
  • Strainer
  • Highball or rocks glasses
  • Citrus juicer or hand-squeezed limes
  • Cutting board and knife for garnish prep
  • Ice bucket or freezer access

Method
 

  1. Place highball or rocks glasses in the freezer for at least 2 minutes to chill.
  2. Cut 2 limes in half and squeeze to extract 1/2 cup (4 ounces) of fresh lime juice.
  3. Fill a cocktail shaker halfway with ice cubes (about 1 cup).
  4. Add 2 cups pineapple juice, 1/2 cup fresh lime juice, 1/4 cup simple syrup, and 1/4 cup orange juice into the shaker.
  5. If making an alcoholic version, add 2 ounces of coconut rum to the shaker.
  6. Cap the shaker and shake vigorously for 10 seconds until the outside is frosty.
  7. Remove the chilled glasses from the freezer and strain the mixture into each glass over fresh ice.
  8. Garnish each drink with a pineapple wedge and a lime wheel, then serve immediately.

Notes

Chill all ingredients and glassware in advance for best results; serve immediately while cold for maximum flavor.
