Pineapple Agua Fresca

Ingredients

  • 1 medium fresh pineapple peeled, cored, and roughly chopped (about 4 cups)
  • 4 cups cold water divided
  • Juice of 2 limes about 3 tablespoons
  • 2 tablespoons honey or agave nectar optional
  • Ice for serving

Method
 

  1. Choose a ripe pineapple, trim the crown and bottom, peel the skin, and remove any brown eyes.
  2. Slice the pineapple in half lengthwise, remove the core, and chop the flesh into 2-inch chunks.
  3. Add the pineapple chunks to a blender in batches, then pour in 2 cups of cold water.
  4. Blend on high speed for 60 to 90 seconds until the mixture is completely smooth.
  5. Line a fine-mesh strainer with cheesecloth over a large pitcher and strain the puree, discarding the pulp.
  6. Stir in the fresh lime juice and honey or agave nectar until fully dissolved.
  7. Pour in the remaining 2 cups of cold water and stir to combine.
  8. Chill the agua fresca in the refrigerator for at least 30 minutes or serve immediately over ice.

Notes

Refrigerate in a sealed pitcher for up to 3 days, stirring before serving. Save the strained pulp for compost or smoothies.
