Ingredients

  • 2 cups fresh pine needles washed
  • 4 cups water
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1/2 teaspoon vanilla extract optional
  • Club soda for serving

Method
 

  1. Thoroughly wash 2 cups of fresh pine needles to remove any dirt or residue.
  2. In a medium saucepan, bring 4 cups of water to a rolling boil over high heat.
  3. Add the washed pine needles to the boiling water and reduce heat to medium-low.
  4. Simmer the mixture for 20 minutes to extract the pine flavor.
  5. Strain the pine-infused liquid through a strainer or cheesecloth into a large pitcher.
  6. While the liquid is still warm, add 1 cup of granulated sugar and stir until fully dissolved.
  7. Stir in 1/4 cup of lemon juice and 1/2 teaspoon of vanilla extract, if using.
  8. Allow the mixture to cool to room temperature, then refrigerate until chilled, about 1 hour.
  9. To serve, fill glasses with ice, pour in the chilled pine infusion to halfway, and top with club soda.

Notes

Adjust sweetness to taste and serve immediately for maximum fizziness.
