Method
- Gather all ingredients and equipment before starting to keep the process smooth.
- Stir the coconut cream well to ensure it's smooth and free of lumps.
- Measure and pour 3 ounces of pineapple juice into the blender.
- Add 2 ounces of coconut cream to the blender.
- Add 1 cup of ice and 2 ounces of sparkling water or club soda if using.
- Blend on high speed for 30 to 45 seconds until smooth and frothy.
- While blending, prepare a tall glass by adding fresh ice and rimming it with coconut flakes if desired.
- Pour the blended mixture into the prepared glass, garnish with a pineapple wedge or cherry, and serve immediately.
Notes
Make a batch for multiple people by multiplying the ingredients and blending in stages, or pre-measure ingredients and freeze for quick individual servings.
