  • 3 ounces pineapple juice fresh or canned
  • 2 ounces coconut cream full-fat and well-stirred
  • 1 cup ice crushed or cubed
  • 2 ounces sparkling water or club soda optional, for a lighter version
  • 1 pineapple wedge or cherry for garnish
  • coconut flakes for rim optional

  • Measuring cups and spoons
  • Tall drinking glass
  • Cocktail shaker (optional)

Method
 

  1. Gather all ingredients and equipment before starting to keep the process smooth.
  2. Stir the coconut cream well to ensure it's smooth and free of lumps.
  3. Measure and pour 3 ounces of pineapple juice into the blender.
  4. Add 2 ounces of coconut cream to the blender.
  5. Add 1 cup of ice and 2 ounces of sparkling water or club soda if using.
  6. Blend on high speed for 30 to 45 seconds until smooth and frothy.
  7. While blending, prepare a tall glass by adding fresh ice and rimming it with coconut flakes if desired.
  8. Pour the blended mixture into the prepared glass, garnish with a pineapple wedge or cherry, and serve immediately.

Notes

Make a batch for multiple people by multiplying the ingredients and blending in stages, or pre-measure ingredients and freeze for quick individual servings.
