Ingredients

Main
  • 6-8 lbs ripe pears any variety
  • 1 gallon filtered water
  • 1 cup sugar
  • 1 packet Champagne or cider yeast
  • Campden tablets optional, for sterilizing the must

Equipment

  • Fermentation vessel (1-gallon glass carboy or food-grade bucket)
  • Airlock and stopper
  • Siphon or racking cane
  • Bottling bucket or funnel
  • Clean bottles with caps or corks
  • Hydrometer (optional, for measuring sugar content)

Method

  1. Wash and core the pears, removing any blemishes.
  2. Cut the pears into quarters and mash them using a potato masher or food processor.
  3. In your fermentation vessel, mix the pear mash with water and sugar. Stir well to dissolve the sugar.
  4. Sprinkle the yeast over the mixture without stirring.
  5. Fit the airlock onto the fermentation vessel.
  6. Place the vessel in a cool, dark place and let it ferment for 1-2 weeks.
  7. Once fermentation is complete, carefully siphon the cider into a clean bottling bucket or directly into bottles.
  8. Cap or cork the bottles and store them in a cool, dark place.
  9. Aging for at least a month allows flavors to develop further.
