- Select a fragrant ripe peach, wash it, pit it, and cut about a quarter to a third of the flesh into grape-sized chunks.
- Place the peach chunks into a clean rocks glass at room temperature.
- Add the sugar cube or simple syrup to the glass and pour two dashes of Angostura bitters over the peach pieces.
- Muddle the peach and sugar gently but firmly for about 30 seconds to release juice and dissolve sugar.
- Pour 1.5 ounces of bourbon or rye whiskey into the glass over the muddled peach mixture.
- Add one large ice cube or fill the glass three-quarters full with ice cubes.
- Stir the mixture with a bar spoon for 30 seconds in a smooth circular motion to chill and blend flavors.
- Taste the cocktail and adjust sweetness or strength by adding a splash of water, bourbon, or peach juice if needed.
- Express oils from a lemon twist over the drink or garnish with a thin peach slice, then serve immediately.
