Method
 

  1. Pull out your frozen pineapple, coconut cream, coconut milk, and pineapple juice before you start blending. Having everything ready means you're just steps away from a delicious drink.
  2. Pour the 1.5 cups of frozen pineapple chunks into your blender first. Starting with the frozen fruit helps anchor everything as you add liquids.
  3. Measure out 0.75 cup of cream of coconut and add it to the blender.
  4. Pour in 0.5 cup of full-fat coconut milk, which adds silky texture and prevents the drink from becoming too thick or grainy.
  5. Measure out 0.5 cup of pineapple juice and add it to the blender with your other ingredients.
  6. Toss in 0.5 cup of ice cubes on top of everything, which will help create that perfect frosty texture.
  7. Blend on high speed for 45 to 60 seconds until the mixture becomes completely smooth with no visible chunks of fruit. Stop blending once you've reached a uniform consistency.
  8. Divide the blended mixture equally between two tall glasses, pouring slowly to let the drink settle.
  9. Add a fresh pineapple wedge hooked over the rim of each glass, and top with a maraschino cherry if you like. Serve immediately while the drink is still cold and frothy.

Notes

Keep your cream of coconut and pineapple juice in the refrigerator before blending so your drink stays colder longer. Use frozen pineapple rather than fresh for consistent thickness. Chill your glasses in the freezer for five minutes before pouring to keep the drink cold throughout drinking. The blended mixture will last up to two days in an airtight container in the refrigerator, though separation will occur - re-blend briefly before serving.
