Method
- Fill a tall glass with 1 cup of ice cubes to chill the glass.
- Cut a lime in half and squeeze 2 ounces of fresh lime juice into a measuring cup (about 1 minute).
- Rinse and pat dry 8-10 fresh mint leaves under cool water.
- Place the mint leaves in the glass and gently muddle 5-8 times to release oils.
- Pour 2 ounces of lime juice and 1 tablespoon of simple syrup into the glass and stir for 10 seconds to combine.
- Add ice cubes to fill the glass about three-quarters full.
- Slowly pour 4 ounces of club soda over the ice to preserve carbonation.
- Use a bar spoon to gently stir for 5 seconds until ingredients are blended.
- Garnish with a lime wheel and a sprig of fresh mint, then serve immediately.
Notes
Make simple syrup ahead of time by dissolving equal parts sugar and hot water and keeping it refrigerated for quick mixing.
