Ingredients
  

Main
  • 1 ounce light rum preferably white or silver rum
  • 1 ounce dark rum aged or spiced rum works well
  • 0.5 ounces passion fruit syrup or passion fruit juice if unavailable
  • 0.5 ounces fresh lime juice about 1 lime
  • 0.25 ounces fresh lemon juice
  • 0.25 ounces simple syrup optional, for sweetness adjustment
  • 1 cup ice crushed or cubed
  • Lime wheel for garnish
  • Cherry optional traditional garnish

Equipment

  • Cocktail shaker or mixing glass
  • Bar spoon or long spoon
  • Jigger for measuring spirits
  • Lime juicer or hand juicer
  • Hurricane glass or specialty cocktail glass
  • Strainer (Hawthorne or fine mesh)
  • Bar towel
  • Ice bucket or freezer

Method
 

  1. Chill your hurricane glass by filling it with ice and set aside for 2 minutes.
  2. Pour 1 ounce light rum into a cocktail shaker using a jigger.
  3. Add 1 ounce dark rum to the shaker.
  4. Add 0.5 ounces passion fruit syrup to the shaker.
  5. Add 0.5 ounces fresh lime juice to the shaker.
  6. Add 0.25 ounces fresh lemon juice to the shaker.
  7. Fill the shaker with approximately 1 cup of ice.
  8. Shake vigorously for 10 to 15 seconds until the shaker is frosty.
  9. Discard the ice from the chilled glass and strain the cocktail over fresh ice.
  10. Garnish with a lime wheel and optional cherry, and serve immediately.

Notes

Serve immediately and stir gently if the syrup settles at the bottom.
