Ingredients

Main
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 avocado diced
  • Fresh cilantro for garnish

Equipment

  • Large pot
  • Skillet
  • Wooden spoon
  • Measuring cups and spoons
  • Serving bowls

Method

  1. In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes, stirring occasionally to break it up.
  2. Stir in the chili powder, cumin, salt, and pepper. Cook for an additional minute.
  3. Add the black beans and corn to the skillet. Cook for another 5 minutes, allowing everything to heat through.
  4. Pour in the diced tomatoes and stir well. Cook for 3 minutes.
  5. In a separate pot, heat the cooked rice until warm.
  6. In serving bowls, add a scoop of rice and top with the meat mixture.
  7. Sprinkle shredded cheese over the hot meat mixture. Let it sit for a minute to melt the cheese.
  8. Finish with diced avocado and fresh cilantro on top.

Notes

Customize the toppings based on preference and enjoy with tortilla chips or a fresh salad.
