Ingredients

  • 6 to 8 limes juiced (about 1 cup fresh lime juice)
  • 1 cup loosely packed fresh mint leaves
  • 1/2 cup simple syrup
  • 3 cups cold water
  • 1.5 cups ice
  • Pinch sea salt optional, for rim

Method
 

  1. Rinse and pat dry mint leaves to remove excess water.
  2. If you don’t have pre-made simple syrup, combine 1/2 cup granulated sugar with 1/2 cup hot water; stir until dissolved, then let cool for 10 minutes.
  3. Cut limes in half and juice them using a citrus juicer into a measuring cup, yielding about 1 cup of fresh juice.
  4. Place dried mint leaves in a large pitcher and gently press with the back of a wooden spoon to bruise and release oils.
  5. Pour the fresh lime juice over the bruised mint and stir briefly to activate mint aromatics.
  6. Add the cooled simple syrup to the pitcher and stir gently until fully combined.
  7. Stir in 3 cups of cold water; taste and adjust sweetness by adding more syrup if desired.
  8. Fill glasses with ice, strain and pour the limeade over the ice, garnish with a mint sprig and optional lime wheel, and serve immediately.

Notes

Make simple syrup ahead and store in the refrigerator for up to one month. Serve over fresh ice and garnish with a mint sprig for best results.
