Method
- Pour the Mexican candy rim mix onto a small plate and spread it evenly.
- Rub a lime wedge around the rim of your glass until it is wet all the way around to help the mix adhere.
- Press the wet rim into the seasoning mix, rotating slowly to coat evenly, then shake off excess.
- Fill the prepared glass with 1 cup of fresh ice cubes.
- Measure 2 ounces of blanco tequila into a cocktail shaker using a jigger.
- Add 1 ounce of fresh lime juice to the shaker.
- Pour in 0.5 ounce of tamarind paste and 0.5 ounce of chamoy sauce.
- Add 0.5 ounce of simple syrup and about 1 cup of ice to the shaker.
- Seal the shaker and shake vigorously for 10 to 12 seconds, until the outside is frosty and cold.
- Use a cocktail strainer to pour the mixture into the candy-rimmed glass filled with fresh ice.
- Garnish with a lime wheel or wedge on the rim and serve immediately.
Notes
Use fresh lime juice every single time for the best flavor; bottled juice will lack brightness.
