Ingredients

  • 2 ounces blanco tequila
  • 1 ounce fresh lime juice about half a lime
  • 0.5 ounce tamarind paste or tamarind concentrate diluted with water
  • 0.5 ounce chamoy sauce
  • 0.5 ounce simple syrup
  • 1 cup ice cubes
  • Mexican candy rim mix equal parts chili powder, tajin seasoning, and crushed tamarind hard candy
  • Lime wedge for garnish and rim coating

Equipment

  • Cocktail shaker
  • Jigger or measuring cup
  • Cocktail strainer
  • Highball or rocks glass
  • Bar spoon
  • Small plate or lime wedge for rim
  • Knife for cutting lime wedges

Method
 

  1. Pour the Mexican candy rim mix onto a small plate and spread it evenly.
  2. Rub a lime wedge around the rim of your glass until it is wet all the way around to help the mix adhere.
  3. Press the wet rim into the seasoning mix, rotating slowly to coat evenly, then shake off excess.
  4. Fill the prepared glass with 1 cup of fresh ice cubes.
  5. Measure 2 ounces of blanco tequila into a cocktail shaker using a jigger.
  6. Add 1 ounce of fresh lime juice to the shaker.
  7. Pour in 0.5 ounce of tamarind paste and 0.5 ounce of chamoy sauce.
  8. Add 0.5 ounce of simple syrup and about 1 cup of ice to the shaker.
  9. Seal the shaker and shake vigorously for 10 to 12 seconds, until the outside is frosty and cold.
  10. Use a cocktail strainer to pour the mixture into the candy-rimmed glass filled with fresh ice.
  11. Garnish with a lime wheel or wedge on the rim and serve immediately.

Notes

Use fresh lime juice every single time for the best flavor; bottled juice will lack brightness.
