Ingredients
  

Main
  • 4 cups water
  • 1 cup mauby bark
  • 1 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon nutmeg optional
  • 1 teaspoon cinnamon optional

Method
 

  1. Bring 4 cups of water to a rolling boil in a medium saucepan over high heat, about 5 minutes.
  2. Add 1 cup of mauby bark to the boiling water and stir to combine.
  3. Reduce heat to low and simmer the mixture, uncovered, for 30 minutes to extract flavors.
  4. Strain the mauby liquid through a fine mesh strainer or cheesecloth into a pitcher to remove the bark pieces.
  5. While the liquid is still warm, stir in 1 cup of sugar until fully dissolved.
  6. Stir in 1 teaspoon of vanilla extract and add optional spices: 1 teaspoon of nutmeg and 1 teaspoon of cinnamon.
  7. Allow the mauby to cool to room temperature, then refrigerate for at least 1 hour to chill.
  8. Pour the chilled mauby into glasses over ice and garnish with a cinnamon stick or lime slice before serving.

Notes

Adjust sweetness to taste and serve chilled for best flavor.
