Ingredients
  

Main
  • 4 cups fresh mango chunks or frozen mango thawed if frozen
  • 1 cup fresh lime juice about 8 limes
  • 4 cups cold water or chilled coconut water
  • 1/2 cup granulated sugar or honey
  • 8-10 fresh mint leaves
  • 1/4 teaspoon salt
  • Ice cubes for serving
  • Optional: 1 cup ginger ale or sparkling water for added fizz

Method
 

  1. Cut fresh mangoes and scoop the flesh into a bowl, or let frozen mango thaw for 5 minutes.
  2. Roll and juice limes to yield 1 cup of fresh lime juice.
  3. Blend mango chunks with 1 cup of cold water on high for 60 seconds until smooth.
  4. Strain the blended mango through a fine mesh strainer into a bowl, pressing solids to extract liquid.
  5. Pour the mango base into a pitcher and add lime juice, remaining water, sugar, and salt.
  6. Add mint leaves to the pitcher and gently muddle for 20 seconds to release oils.
  7. Stir the punch for about 1 minute to dissolve sugar and blend flavors.
  8. Fill glasses with ice and pour the punch over, ensuring each glass gets some mint. Serve immediately.

Notes

Prepare the mango base up to a day ahead and refrigerate; add ice and mint just before serving for best freshness.
