  • 1 cup fresh mango puree from about 2 ripe mangoes
  • 1/2 cup fresh lime juice about 4 large limes
  • 1/4 cup fresh ginger syrup or store-bought
  • 1 cup sparkling water or club soda
  • 1/2 cup ice cubes
  • Pinch of sea salt
  • Fresh mint leaves for garnish optional
  • Mango slices for garnish optional

Method
 

  1. Select ripe mangoes by gently pressing the stem end; cut in half lengthwise, scoop out the flesh, and reserve.
  2. Add the mango chunks to a blender and pulse until smooth, adding up to 2 tablespoons of water if needed for a silky puree.
  3. Cut limes in half and juice them with a citrus or hand juicer; strain the juice through a fine mesh strainer to remove seeds and pulp.
  4. Prepare ginger syrup by simmering equal parts sugar and water with fresh ginger slices for 15 minutes, then strain and cool, or use store-bought syrup.
  5. Divide ice cubes evenly between two tall glasses to chill and prevent dilution as you assemble the mocktail.
  6. Combine mango puree, lime juice, ginger syrup, and a pinch of sea salt in a cocktail shaker or mason jar; add ice to fill halfway.
  7. Seal the shaker and shake vigorously for 15 seconds until the outside is frosty and the mixture is chilled and aerated.
  8. Strain the mixture evenly into the prepared ice-filled glasses to remove any pulp or ice shards.
  9. Top each glass with sparkling water, pouring gently to preserve carbonation, then stir briefly with a spoon to combine.
  10. Garnish with fresh mint leaves and a mango slice, then serve immediately while cold and fizzy for best flavor.
