Ingredients
  

Main
  • 1 cup Malibu Rum or coconut rum
  • 2 cups pineapple juice fresh or quality bottled
  • 1 cup orange juice fresh squeezed preferred
  • 1/2 cup lime juice about 4 to 5 fresh limes
  • 2 cups ginger ale or club soda
  • Ice for serving
  • Fresh pineapple chunks for garnish
  • Lime wheels for garnish
  • Maraschino cherries for garnish optional

Equipment

  • Large pitcher (at least 2 quarts)
  • Measuring cups and spoons
  • Wooden spoon or bar spoon for stirring
  • Glasses for serving
  • Ice bucket or cooler
  • Citrus juicer or reamer
  • Cutting board and knife

Method
 

  1. Chill all juices and the rum in the refrigerator for at least 30 minutes before mixing.
  2. Fill the pitcher halfway with ice to keep the punch cold during mixing.
  3. Pour 1 cup of Malibu Rum over the ice in the pitcher.
  4. Add 2 cups of pineapple juice to the pitcher.
  5. Pour in 1 cup of orange juice and stir gently.
  6. Measure and add 1/2 cup of freshly squeezed lime juice, then stir to combine.
  7. Stir the mixture thoroughly for about 30 seconds to ensure all ingredients are evenly combined.
  8. Top the mixture with 2 cups of ginger ale or club soda and stir gently to preserve the carbonation.
  9. Taste the punch and adjust by adding more lime juice or pineapple juice as desired.
  10. Add additional ice if needed and garnish with pineapple chunks, lime wheels, and cherries before serving.

Notes

Prepare the juice base ahead and chill; add carbonated beverage and fresh ice just before serving for maximum fizz.
