Ingredients
  

Main
  • 3 to 4 whole fresh lychees or 3 ounces peeled flesh
  • 8 to 10 fresh mint leaves
  • 0.75 ounces fresh lime juice about half a lime
  • 2 ounces white rum
  • 0.5 ounces simple syrup
  • 2 to 3 ounces club soda or sparkling water
  • 6 to 8 ice cubes plus extra for the glass
  • Optional: lime wheel or mint sprig for garnish

  • Cocktail shaker or mason jar with lid
  • Muddler or wooden spoon
  • Jigger for measuring spirits and liqueurs
  • Fine mesh strainer
  • Highball glass or tall cocktail glass
  • Bar spoon or long-handled spoon
  • Knife
  • Cutting board

Method
 

  1. Peel and pit 3 to 4 lychees, keeping the flesh intact.
  2. Fill a highball glass with ice and set aside for 1 minute to chill.
  3. Pick 8 to 10 mint leaves and gently pinch to release oils without bruising.
  4. In a cocktail shaker, muddle the lychee flesh and mint leaves for about 15 seconds.
  5. Add 0.75 ounces fresh lime juice, 2 ounces white rum, and 0.5 ounces simple syrup to the shaker.
  6. Fill the shaker halfway with 6 to 8 ice cubes.
  7. Shake vigorously for 10 to 15 seconds until the shaker is frosty.
  8. Discard the ice from the glass and strain the cocktail through a fine mesh strainer into the glass.
  9. Top with 2 to 3 ounces of club soda or sparkling water and stir gently.
  10. Garnish with a lime wheel or mint sprig and serve immediately.

Notes

Muddle gently to avoid bitterness and serve immediately to maintain freshness and carbonation.
