Ingredients

Main
  • 1 cup fresh lemon juice
  • 1 cup simple syrup
  • 2 cups prosecco or sparkling wine
  • 1 cup soda water
  • Lemon slices for garnish
  • Fresh mint leaves for garnish

Equipment

  • Pitcher or large mixing glass
  • Spoon for stirring
  • Measuring jigger
  • Highball glasses or wine glasses
  • Ice cubes

Method

  1. Combine equal parts sugar and water in a saucepan over medium heat. Stir until the sugar dissolves, then let it cool.
  2. Roll the lemons on the counter before cutting them to release more juice. Squeeze the lemons through a strainer to catch seeds and pulp.
  3. In a pitcher, combine the fresh lemon juice and cooled simple syrup. Give it a good stir to blend the flavors.
  4. Slowly pour in the prosecco to maintain the bubbles. Stir gently to combine without losing the fizz.
  5. Top the mixture with soda water for added refreshment.
  6. Taste your spritz and adjust sweetness if necessary by adding more simple syrup.
  7. Fill glasses with ice cubes. Pour the Lemon Spritz mixture over the ice, filling each glass to the brim.
  8. Add lemon slices and fresh mint leaves for a beautiful presentation. Serve immediately and enjoy.

Notes

For a fun twist, experiment with flavored syrups like raspberry or elderflower!
