Ingredients

Main
  • 1 cup granulated sugar
  • 8 bags black or green tea
  • 1 SCOBY Symbiotic Culture of Bacteria and Yeast
  • 2 cups starter tea from previous batch or store-bought kombucha
  • Filtered water enough to fill the jar
  • Flavoring ingredients e.g., fruits, herbs, spices

Equipment

  • 1-gallon glass jar
  • Cheesecloth or coffee filter
  • Rubber band
  • Measuring cups
  • Wooden spoon
  • Clean bottles for storage
  • Funnel (optional)

Method

  1. Boil about 4 cups of filtered water and steep the tea bags for 10-15 minutes.
  2. Remove the tea bags and stir in the sugar until dissolved.
  3. Pour the tea mixture into your glass jar and add enough filtered water to fill it to about 3/4 full.
  4. Once the mixture is cool, add the SCOBY and starter tea.
  5. Use cheesecloth or a coffee filter secured with a rubber band to cover the jar.
  6. Let the jar sit in a warm, dark place for 7 to 14 days.
  7. Once fermented, remove the SCOBY and add your desired flavoring ingredients directly to the brewed kombucha.
  8. Using a funnel, pour the flavored kombucha into clean bottles, leaving some space at the top.
  9. Seal tightly and let them sit at room temperature for 3-7 days for carbonation.

Notes

Always keep your equipment sanitized to avoid contamination. Serve chilled or at room temperature.
