  • 1 cup granulated sugar
  • 8 bags black or green tea
  • 1 SCOBY Symbiotic Culture of Bacteria and Yeast
  • 1 cup starter tea from a previous brew or store-bought kombucha
  • Water enough to fill the jar, about 14 cups

Equipment

  • 1-gallon glass jar
  • Cheesecloth or coffee filter
  • Rubber band or string
  • Measuring cups
  • Wooden or plastic spoon
  • Funnel
  • Clean bottles for storage

Method

  1. Start by bringing 4 cups of water to a boil.
  2. Add the sugar to the boiling water and stir until completely dissolved.
  3. Remove from heat and add tea bags, allowing them to steep for about 10 minutes.
  4. After steeping, remove the tea bags and let the mixture cool.
  5. In your 1-gallon jar, add the cooled tea concentrate and fill the jar with about 10 cups of filtered water.
  6. Pour in the starter tea into the jar.
  7. Gently place the SCOBY into the jar.
  8. Cover the jar with cheesecloth or a coffee filter secured with a rubber band.
  9. Place the jar in a warm, dark spot for 7 to 14 days.

Notes

Serve your kombucha chilled for the best experience. You can experiment with flavors by adding fruits or herbs during the secondary fermentation.
