  • 1.5 ounces sweetened condensed milk
  • 1 ounce heavy cream
  • 1 ounce fresh key lime juice
  • 0.5 ounce Cointreau or triple sec
  • 0.5 ounce simple syrup
  • Crushed ice for shaking
  • Graham cracker crumbs for rimming the glass
  • Fresh key lime wheels or twists for garnish
  • Whipped cream for topping optional

Method
 

  1. Place two martini glasses in the freezer for at least 5 minutes to chill them thoroughly.
  2. Pour graham cracker crumbs onto a shallow plate. Run a lime wedge around the rim of each chilled glass, then dip the wet rim into the crumbs to create a textured border.
  3. Fill your cocktail shaker halfway with crushed or regular ice.
  4. Using a jigger, pour 2 ounces of vodka and 0.5 ounce of Cointreau into the shaker.
  5. Add 1.5 ounces of sweetened condensed milk and 1 ounce of heavy cream directly into the shaker.
  6. Add 1 ounce of fresh key lime juice to the shaker.
  7. Pour 0.5 ounce of simple syrup into the shaker, seal the lid tightly, and shake vigorously for 15 seconds to emulsify the cream and condensed milk.
  8. Using a fine mesh strainer, pour the mixture evenly into both prepared glasses, straining out any ice chips.
  9. Top each glass with a dollop of whipped cream and garnish with a fresh key lime wheel or twisted lime peel. Serve immediately.

Notes

Fresh key lime juice makes a noticeable difference in flavor. Use the coldest glassware possible and shake vigorously for the full 15 seconds to properly emulsify the cream. These cocktails must be consumed immediately as they begin to separate after about 10 minutes. For a tropical variation, swap half the heavy cream for coconut cream and add coconut rum.
