Method
- Gather and prep your ingredients: let cream cheese and shredded cheddar sit at room temperature for about 5 minutes.
- Combine the softened cream cheese and shredded cheddar in a food processor or large mixing bowl and blend or mix until uniform, about 1 to 2 minutes.
- Add 2 ounces of beer and mix on low speed until the mixture loosens up and becomes creamy, scraping the sides as needed.
- Add the remaining 2 ounces of beer and continue mixing until smooth and spreadable; if too thick, add additional beer by the tablespoon.
- Mix in 1 teaspoon Worcestershire sauce until fully incorporated, scraping down the bowl sides.
- Add garlic powder, cayenne pepper, dry mustard powder, black pepper, and salt; mix for about 1 minute, then taste and adjust seasoning.
- Fold in fresh chives by hand with a spatula to preserve their color.
- Transfer the beer cheese to a serving bowl, smooth the top, and serve immediately at room temperature or chill for up to 2 hours for a firmer texture.
Notes
If the dip is grainy or split, add one tablespoon of softened cream cheese and blend until smooth.
