Italian Cream Soda

Ingredients
  

Main
  • 1/2 to 3/4 ounce flavored syrup strawberry, raspberry, amaretto, or your choice
  • 8 to 10 ounces sparkling water cold
  • 1 to 2 ounces heavy cream or half-and-half
  • Ice cubes optional

Equipment

  • 12 to 14 ounce tall glass
  • Long bar spoon or cocktail stirrer
  • Measuring jigger or shot glass
  • Small pitcher or container for cream

Method
 

  1. Place a tall glass in the freezer and chill for 5 minutes.
  2. Pour 1/2 to 3/4 ounce of flavored syrup into the bottom of the chilled glass.
  3. Add 3 to 4 ice cubes if desired for extra chill.
  4. Slowly pour 8 to 10 ounces of ice-cold sparkling water into the glass over the syrup.
  5. Gently stir with a long bar spoon for 3 to 4 swirls to partially mix the syrup.
  6. Hold the bar spoon just above the drink’s surface and pour 1 to 2 ounces of cold heavy cream down the back of the spoon to float on top.
  7. Let the drink sit for a few seconds to allow the cream layers to settle.
  8. Optionally, give a gentle final stir before serving or leave layers intact for visual appeal.

Notes

Serve immediately to preserve carbonation and beautiful cream layers. Use chilled ingredients for best results.
