Method
- Place a tall glass in the freezer and chill for 5 minutes.
- Pour 1/2 to 3/4 ounce of flavored syrup into the bottom of the chilled glass.
- Add 3 to 4 ice cubes if desired for extra chill.
- Slowly pour 8 to 10 ounces of ice-cold sparkling water into the glass over the syrup.
- Gently stir with a long bar spoon for 3 to 4 swirls to partially mix the syrup.
- Hold the bar spoon just above the drink’s surface and pour 1 to 2 ounces of cold heavy cream down the back of the spoon to float on top.
- Let the drink sit for a few seconds to allow the cream layers to settle.
- Optionally, give a gentle final stir before serving or leave layers intact for visual appeal.
Notes
Serve immediately to preserve carbonation and beautiful cream layers. Use chilled ingredients for best results.
